Prawns with Chilli and Basil

Ingredients
- 250g fresh prawns, with tails on
- 10ml red curry paste
- 20ml oil
- 2 cloves garlic
- 2 chillis, red or green
- 20ml fish sauce
- 5g sugar
- 1/3 cup basil
- 2 kaffir lime leaves, shredded
- 2Tbsp coconut cream
Cooking Instructions
- De-vein the prawns and leave tails intact
- Chop garlic finely
- Slice the chillis and lime leaves
- Heat the oil and fry garlic until fragrant
- Add the curry paste and fry for 2 minutes, then add the coconut cream, fish sauce, sugar and chillis
- Add prawns and fry for 1-2 minutes
- When prawns are cooked, stir through the basil leaves and serve garnished with extra basil leaves and lime leaves
