Prawns with Chilli and Basil

Also known as Goong pad prik.

  • 250g fresh prawns, with tails on
  • 10ml red curry paste
  • 20ml oil
  • 2 cloves garlic
  • 2 chillis, red or green
  • 20ml fish sauce
  • 5g sugar
  • 1/3 cup basil
  • 2 kaffir lime leaves, shredded
  • 2Tbsp coconut cream
Cooking Instructions
  1. De-vein the prawns and leave tails intact
  2. Chop garlic finely
  3. Slice the chillis and lime leaves
  4. Heat the oil and fry garlic until fragrant
  5. Add the curry paste and fry for 2 minutes, then add the coconut cream, fish sauce, sugar and chillis
  6. Add prawns and fry for 1-2 minutes
  7. When prawns are cooked, stir through the basil leaves and serve garnished with extra basil leaves and lime leaves
