Pad Grapow Gai, or Chicken with Basil and Chilli

Topped with a fried egg of course. We couldn't get grapow (holy basil) in Mt Gambier, but had a paste brought from Thailand. We used some of Mum's home grown chilli's, as well as supermarket chillis (plus the paste) and it turned out rather spicy. After his first mouthful Dad ignored his wine and went for a jug of water.
